Ingredients:
- ½ cup castor sugar
- 125 g butter
- Âź cups Manuka Honey
- 2 eggs
- ½ cup milk
- 250 dried figs, finely chopped
- 1 ž cups self-raising flour, sifted
- ½ cup Manuka Honey
Preheat the oven to 160°C and grease 12 individual cake or muffin tins or one 20 cm springform tin. Process the sugar, butter and Manuka honey in a kitchen whiz until creamy. Add eggs, milk and half of the dried figs and blend together. Pour this mixture into a bowl and mix in the flour and the remaining figs. Divide between the prepared tins and bake for 15 â 20 minutes or until a skewer comes out clean. Cool. Warm half a cup of Manuka Honey and brush over the cakes.
Chefâs note: If figs are unavailable this is equally as good with prunes or apricots. For a special occasion presoak the dried fruit in liqueur.
MAKE 12 INDIVIDUAL CAKES OR 1 LARGE CAKE.
