Ingredients:
- 1 cup pumpkin puree
- 3 tablespoons Manuka honey
- 3 cloves garlic
- 1 can chickpeas
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- Salt
- 1/2 teaspoon ground cumin
- Freshly ground black pepper
Preheat oven to 360°. Toss pumpkin and garlic in oil. Add ground cumin and a little salt. Cook in a shallow roasting dish for 20 to 30 minutes until tender. Cool.
Place pumpkin mixture in food processor with rinsed and drained chickpeas & 3 Tbsp Manuka honey. Blend to the consistency you like (creamy or chunky). Add salt, freshly ground black pepper and lemon juice to taste.
Serve with a drizzle of Manuka honey â topped with fresh herbs and seeds and served with fresh warm bread.
