Have yourself a very honey Christmas…

Manuka honey is an incredibly popular product during the Winter months.

Thanks to honey’s popularity as a soothing drink or tonic for a sore throat and cough, many people like to have a jar or two in the cupboard this season.

But did you know that Manuka honey can also provide some sweetness to your festive foods?

Here are two ways to use Manuka honey this Christmas.

  1. MANUKA HONEY CHRISTMAS COOKIES:

Using Manuka honey gives cookies and biscuits a distinctive golden brown colour, adds a bold flavour and keep them delicious! Try this recipe for your pre-Christmas party this year.

Ingredients

1/4 cup sugar

2 tablespoons canola oil

1 large egg, room temperature

3 tablespoons Manuka honey

3/4 teaspoon vanilla extract

1 cup plus 2 tablespoons all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon ground cinnamon

1/8 teaspoon salt

Directions

In a small bowl, beat sugar and oil until blended. Beat in egg; beat in Manuka honey and vanilla. Combine flour, baking powder, cinnamon and salt; gradually add to sugar mixture and mix well (dough will be stiff). Cover and refrigerate for at least 2 hours.

Preheat oven to 180C degrees. Drop dough by tablespoonfuls onto a greased baking sheet. Bake until bottoms are lightly browned, 8-10 minutes. Cool for 1 minute before removing from pan to a wire rack. Store in an airtight container.

  1. MANUKA HONEY GLAZED CARROTS

Manuka Honey glazed carrots are an easy recipe that transforms the everyday carrot into a show-stopping sweet and savoury side dish for your Christmas Dinner

STEP 1

Heat the oven to 190C/170C fan/gas 5. Tip the carrots into a roasting tin and toss with the sunflower oil and some salt and pepper. Roast for 30 mins.

STEP 2

Drizzle the vinegar and lightly warmed Manuka honey over the carrots, toss well and return to the oven for a further 20 mins.

Nutritionist Ruth Reynolds from Brighton says she uses Manuka honey in the Winter months often in a hot drink, telling us “it’s a classic combination to soothe a sore throat. But not all honey is created equal though, so look for genuine Manuka honey with such a high MGO grade which means a high anti-microbial count to kill off the bugs.”
