Ingredients:
(Serves 4–6)
- 2 tbsp Manuka Doctor Manuka Honey (the higher the MGO rating the better for wellbeeing® benefit)
- 1½ cups filtered water
- ½ cup fresh lemon juice (about 2 large lemons)
- 1 tsp grated fresh ginger
- ¼ tsp turmeric powder (or 1 tsp fresh turmeric juice)
- 1 tbsp halal-certified gelatin (or agar for a vegan version)
- Optional: 1 tsp rosewater or a few mint leaves for aromatic lift
- Pinch of sea salt
Method:
- Bloom gelatin: In a small bowl, sprinkle gelatin over ¼ cup of cold filtered water. Let it sit for 5 minutes to bloom.
- Infuse base: In a small pot over low heat, add remaining water, lemon juice, ginger, turmeric, sea salt, and bloomed gelatin. Stir continuously and gently heat — do not boil — until gelatin is fully dissolved (about 3–4 minutes).
- Sweeten & balance: Remove from heat. Let the mixture cool slightly (to around 40–45°C) before whisking in Manuka honey and rosewater (if using) to preserve the beneficial enzymes.
- Set: Pour into a square or rectangular glass dish or silicone mold. Refrigerate for at least 4 hours, or until fully set.
- Serve: Cut into cubes and garnish with fresh mint or edible flowers. Best enjoyed chilled.
