Cabbage Health Slaw

Ingredients:

Fruit:
  • 2 cups strawberries, hulled and sliced
  • 2 cups kiwis, peeled and chopped
  • 2 cups pineapple, chopped (fresh preferred)
  • 2 cups peaches, sliced or chopped (use ripe, fresh peaches when in season)
Dressing:
  • 1–2 limes, juiced (to taste)
  • 1 tablespoon Manuka Doctor honey

Directions: 
1-Prepare the Fruit:
  • Strawberries: Rinse thoroughly, remove the green tops (hull) & slice into halves or quarters.
  • Peel Kiwis: Peel with a knife or vegetable peeler & chop into bite - sized pieces.
  • Pineapple: Peel and core if using fresh. Chop into small chunks (about ½ - inch pieces).
  • Peaches: Rinse and slice in half, remove the pit and cut into slices or bite - sized chunks.
2-Make the Lime - Honey Dressing:

In a small bowl:

  • Squeeze the juice of 1 to 2 limes (start with 1 and add more to taste).
  • Add 1 tablespoon Manuka Doctor honey.
  • Whisk well until the honey is dissolved and the dressing is smooth.
3- Combine the Salad:
  • In a large mixing bowl, add all the prepared fruit.
  • Pour the lime - honey dressing over the fruit.
  • Gently toss to coat the fruit evenly without crushing it.
