Cabbage Health Slaw
Ingredients:
Fruit:
- 2 cups strawberries, hulled and sliced
- 2 cups kiwis, peeled and chopped
- 2 cups pineapple, chopped (fresh preferred)
- 2 cups peaches, sliced or chopped (use ripe, fresh peaches when in season)
Dressing:
- 1–2 limes, juiced (to taste)
- 1 tablespoon Manuka Doctor honey
Directions:
1-Prepare the Fruit:
- Strawberries: Rinse thoroughly, remove the green tops (hull) & slice into halves or quarters.
- Peel Kiwis: Peel with a knife or vegetable peeler & chop into bite - sized pieces.
- Pineapple: Peel and core if using fresh. Chop into small chunks (about ½ - inch pieces).
- Peaches: Rinse and slice in half, remove the pit and cut into slices or bite - sized chunks.
2-Make the Lime - Honey Dressing:
In a small bowl:
- Squeeze the juice of 1 to 2 limes (start with 1 and add more to taste).
- Add 1 tablespoon Manuka Doctor honey.
- Whisk well until the honey is dissolved and the dressing is smooth.
3- Combine the Salad:
- In a large mixing bowl, add all the prepared fruit.
- Pour the lime - honey dressing over the fruit.
- Gently toss to coat the fruit evenly without crushing it.
