Our Tart Summer Salad is a juicy mix of seasonal fruits with a touch of natural sweetness—fresh, colorful, and perfect for sharing or enjoying solo on a warm afternoon.

Tart Summer Salad

Ingredients:

Fruits:
  • 2 cups strawberries, hulled and sliced
  • 2 cups red plums, pitted and sliced
  • 2 cups pineapple, chopped
  • 2 cups Honeycrisp apples, chopped (with skin on)
  • 2 cups dragon fruit, diced
Dressing:
  • 1–2 limes, juiced (to taste)
  • 1 tablespoon Manuka Doctor honey

Directions: 
Prepare the Fruit
  • Strawberries: Rinse and remove the green tops, slice in halves or quarters depending on size. 
  • Red Plums: Rinse well, slice in half, remove the pit, and cut into thin wedges or bite-sized chunks. 
  • Pineapple: If using fresh, peel, core, and chop into small chunks (about ½ inch). If using canned, drain well. 
  • Honeycrisp Apples: Rinse and leave the skin on for color and crunch. Core and chop into bite-sized pieces. 
  • Optional: Toss in a small amount of lime juice immediately after cutting to prevent browning. 
  • Dragon Fruit: Cut in half and scoop out the flesh with a spoon. Dice into cubes. 
Make the Lime-Honey Dressing
  • Squeeze the juice from 1–2 limes (start with 1, add more if you like it extra tart).
  • Add 1 tablespoon Manuka Doctor honey.
  • Whisk or shake until smooth and well combined.
Assemble the Salad:
  • Add all the prepared fruits to a large mixing bowl. Pour the lime-honey dressing evenly over the fruit.
  • Gently toss to coat without crushing the more delicate pieces (like dragon fruit or strawberries).
  • Chill & Serve!
